I know his dollar coin was released in 2007, and you can see him on the back of a $2 bill, but has he appeared on any other official U.S. coins or bills, past or present?

You're right about the dollar coin, but it's Thomas Jefferson on the $2 bill.

John Adams is in the group picture on the back of the $2 bill as well as his dollar coin. I could not find any other money that he is on unless I am missing something.
An interesting fact about John Adams presidency is that he did not appoint a Director of the United States Mint.
