How much local currency can I take out of the country and will they check my luggage at the airport?

You are allowed to take out of the country - no more than Ten Thousand Philippine Pesos ( P 10,000.00 ) in philippine currency.
Yes, they will check your luggage at the airport.

Its 10,000 Pesos and depending when you pass through the airport wether they check your bag or not. If its really busy lets say in December when the Airport is buzzing with people they won't bother. But if its quiet season then they most likely will.

Update: I have flown to and from the Philippines from the states or vise versa when I was actually working in the Philippines. Despite what others may say about A 10,000 Peso limit when departing the Philippines. I have never had my wallet checked, so there is no way Customs officials at the International airport in Manila is going to know. 10,000 Pesos is about $250.00. Most travels carry that much or more when traveliong. Its not the amount that counts, as long as you report whats required!.
Now to answer your question: Its up to you how much money you want to take out of the country. If you had a million dollars or 10 million Pesos, you can take it out of the country. The question you should be asking is how much money can you bring into the final destination country?
Your Check-In Luggage will be xrayed and Carry On luggage can be xray and/or both xrayed and physical checked.
Use popular Internet search engine Google to research your final destination countries Customs to determine Countries destination limits before you are required to report.
I have listed two US Customs links below. Reference US Customs Travel Entry Forms you are required to report amounts of $10,000.00 or more. If you bring in more than $10,000.00 to the USA, just report it and you will be ok?

By international standards, you are allowed to carry US$ 10,000 with you (not Philippine peso). Personnel from the Bureau of Custom will open your luggage to check if you have anything to declare.

As long as you can keep it in your pocket. You can bring as much as you want.
