1 hour after sunset. FAR 61.57:
(b) Night takeoff and landing experience.
(1) Except as provided in paragraph (e) of this section, no person may act as pilot in command of an aircraft carrying passengers during the period beginning 1 hour after sunset and ending 1 hour before sunrise, unless within the preceding 90 days that person has made at least three takeoffs and three landings to a full stop during the period beginning 1 hour after sunset and ending 1 hour before sunrise <snip>

The end of evening civil twilight is when you can start logging night flight, but everything relating to currency is 1 hour after sunset to 1 hour before sunrise.

Bizjet is right. Also for Alaska, night is defined as "When a prominent, unlighted object cannot be seen from 3sm, or the sun is more than 6 º below the horizon". Other Regs pertaining to Part 135 and commonly forgotten (I'd bet hardly any 135 pilots in Alaska are night current most of the year) are the 45 minute fuel reserve requirement (FAR 135.209), and VFR minimum altitudes (FAR 135.203(a)2). Not really relevant to your question but could be handy information.
